Matteo, an Italian chef who earned his first Michelin star at just 30, brings a refined yet approachable style rooted in tradition and seasonality. Nadene complements this with experience training across multiple Michelin-starred restaurants, alongside formal qualifications in Food Business Management and Sociology—bringing both technical precision and a deeper understanding of food culture to every dish.
Now based in regional NSW, they are embracing Australia’s exceptional produce—working closely with local ingredients and producers to showcase the region at its best.
