Step inside the factory at Tilba Dairy for an exclusive, behind-the-scenes Camembert workshop at one of Australia’s most awarded artisan cheesemakers.
This is a rare opportunity to see and learn from the best. Inside the production space, you’ll be guided through the full Camembert-making process, from milk selection and starter cultures to mould development, turning, and careful ageing. Watch skilled cheesemakers at work, ask questions, and discover the science and craft behind that perfect white bloom and irresistibly creamy centre.
You’ll gain insight into how flavour, texture and aroma are developed, what makes a truly exceptional Camembert, and how small variations in temperature, timing and technique can transform a cheese. There will be tastings along the way, so you can compare styles and understand the nuances of ripening at different stages.
